Beef & Potato Casserole

Wayne and I made this a few days ago. We wanted something quick, easy, and tasty. This was the best roast beef and vegetable dish I've had in a long time. My mom used to make the greatest roast beef and veggies ever. I know, I know, everyone thinks their moms did it best, but I would challenge anyone else's dish against hers. She gave me the secret to why hers tasted so good. Nope, I'm not going to tell you what it is. 😂 Not today, anyway. But this beef and potato casserole came really close.


It had to be the butter that made this dish so tasty since the recipe came from the Land O’Lakes website. My mom used butter in everything. I guess that's why I'm partial to it. But her roast beef and veggies had an extra punch. Butter isn't her secret.


The dish was simple and quick to make. The recipe calls for baking at 325 degrees for 30 - 40 minutes in a casserole dish which is what we did. We monitored the cooking time to make sure everything was as tender as we like. To make that easier, the next time we're going to make it in a slow cooker or Instant Pot and won't have to monitor it. For a healthier choice, we may use chicken instead of beef or leave the meat out and have a veggie casserole. **I love my veggies. It will still be tasty because the flavorful taste is in the simple sauce ingredients.


The number of servings was just right for the two of us. In fact, we had enough leftovers for lunch the next day.
